Il consorzio è spesso citato per la naturale passione per il vino, la ricerca sui prodotti, la valorizzazione delle frattaglie, delle erbe spontanee e delle verdure dimenticate, la sua cucina è avvolgente come un abbraccio, anche perché stringe le maglie di una comunità di appassionati composta da avventori, cuochi, produttori, vignerons.
